Healthy Cherry Cheesecake


































Hey my lovelies,

what should you do if live gives you a ton of cherries and old whole wheat cookies? Exactly - You make a strawberry cheesecake with cookie crust!
It's super easy and fast to prepare and the best - it's healthier than a "normal" cheesecake!

For the crust you need:

Whole wheat cookies (like Graham Crackers, I made a small cake, so I used half of a package)
1 ripe banana
Coconut Oil

First, preheat the oven to 150C° and spray a pie pan with cooking spray or coconut oil.

Add the cookies to your food processor and mix them until they are really small. Add 1 banana and mix it until the banana is also mashed. If the dough seems to dry, add some coconut oil. Remove it from your food processor and combine everything with your hands. If it's still too dry add more coconut oil. When everything is well combined, add the dough to a pie pan and flatten out the dough with your hands. The whole pie pan should be covered (don´t forget to form the side of the crust)

For the filling you need:

1 package low fat curd cheese (for a small cake 250g, for a large 500g)
1 low fat yoghurt (250g/500g)
1 egg
Honey (depends on how sweet you like it)
Cherries (as many as you like, I used about 2 handful)

Just combine the low fat curd cheese with the yoghurt. Add the honey and try if it's sweet enough. Mix in the egg and at the end add the cherries.

Bake the cheesecake for about 40 minutes or until the filling seems firm.

Very Berry Tarte

summer time is berry time! I love to pick them right from my little garden and eat them instantly, but some of them survived my sweet tooth, so I made a delicious tarte with all I could find in my garden or in my kitchen. Here´s the recipe for you:

For the pie crust you need: 
250g whole wheat flour
125g butter (or coconut oil)
85g brown sugar (or 100g honey or sweetener of your choice)
1 egg

Mix the flour, the sugar and the butter (I used my kitchen machine). Add 1 egg and mix it also in. Take the dough from the bowl and form it to a ball. With a rolling pin, roll the dough out until it's 5mm. Spray a pie pan with cooking spray and add the dough. The whole pie pan should be covered.

For the filling you need:
50g butter (or coconut oil)
100g honey
1 egg
90g whole wheat flour
1tsp baking powder
Strawberries, blueberries, nectarines, red currants (actually whatever you like ;))

Mix the butter and honey, then add the egg, baking powder and flour. Add the filling to the pie crust. Now the funny part: Just add whatever you like: I first added 1 nectarine, some strawberries and sprinkled it with blueberries and red cur-rants :) Bake the pie for 40 minutes (160C°).

Summer salad with asparagus and strawberries


































Oh I love this time of the year: Fresh strawberries and asparagus! Actually almost everything is fresh and tasty in summer and I love to go in my little garden and pick strawberries, raspberries and red currants - Most of the time they don´t survive more then 2 minutes - Oops sorry my fault!
But some strawberries did survive! And they perfect for a combination with asparagus, salad and balsamic vinaigrette <3

You need:

Strawberries (about 250g)
Asparagus ( about 250g)
Lettuce ( I used iceberg lettuce)
Parmesan cheese (optional)

Balsamic vinegar
Olive oil
Honey (or any other sweetener)
Salt
Pepper

First cut the asparagus in pieces. Bring some water to boil and cook the asparagus about 5 minutes. Remove from the water and set aside. Wash and cut the lettuce and the strawberries.
For the vinaigrette combine everything and mix it well (I love using honey, because it goes perfect with the strawberries). In the end mix the asparagus with the lettuce and strawberries and sprinkle it with the vinaigrette. If you like, you can add some parmesan cheese.



Raspberry-Banana Smoothie Bowl with Pomegranate


Today I want to share with you one of my favorite ways to start the day: A perfect, creamy smoothie bowl! So easy and fast to make! Perfect for hot summer days, because it´s super refreshing. 
Of course you can add or skip some ingredients, but I swear, this combination is super delicious.

You need:

1 frozen Banana
1 cup of frozen raspberries
Milk of your choice (I used almond milk)
Pomegranate
Goji Berries (optional)
Physalis (optional)

Put the frozen banana and the raspberries in your blender and add a little bit of milk (Don´t add to much, otherwise the smoothie gets to liquid). Blend it for a few seconds (If the banana is to hard to blend, just wait a few minutes). And actually that´s it. The Smoothie Bowl should have a creamy consistency, almost like ice cream. Then add some topping: Pomegranate, Physalis, Goji Berries..(this list could be endless)
